Recipes from Aunt Carmela

    My aunt recently passed away and I came across some of her recipes and I wanted to share them with you. These recipes go back many many years. This thread is dedicated to my Aunt Carmela. Enjoy!!

    Ricotta Puffs

    1 lb. ricotta
    2 tablespoons sugar
    1 teaspoon vanilla
    3 eggs
    1 cup flour
    4 tablespoons baking powder

    Beat eggs, add sugar, vanilla, ricotta, baking powder and let stand one hour. Add flour and mix. Deep fry!

    You can add powdered sugar when they come out of the deep fryer.

    Potato Pancakes

    6 potatoes, grated
    1 large onion, grated
    1 teaspoon baking powder
    salt
    pepper
    2 eggs
    1 tablespoon flour

    Mix all ingredients together and spoon in oil. Brown on both sides.

    This can be served with apple sauce.

    Mushrooms

    1 package mushrooms
    garlic
    salt
    pepper
    parsley
    celery
    one can diced tomatoes

    Brown garlic in oil. Add all other ingredients and cook until tender. A great side dish!

    Grilled Shrimp Appetizers

    6 jumbo shrimp
    1/2 cup cognac
    6 thin slices of prosciutto
    6 bay leaves
    bread crumbs
    lemon

    Wash shrimp. Put in bowl and pour cognac over top. Marinate one hour. Drain them and wrap each shrimp in a slice of prosciutto. Put shrimp on skewers and alternate with 1 bay leaf. Place on rack in broiler pan and broil at 500 degrees until prosciutto fat begins to sizzle. Remove from oven and roll in bread crumbs. Return to broiler and broil till golden brown.

    Serve hot with lemons.

    Roasted Italian Peppers Casserole

    2 jars 7 1/2 oz. italian roasted peppers, drained
    15 pitted black olives, sliced
    1 clove garlic, minced
    salt
    pepper
    oregano
    1 tablespoon minced parsley
    bread crumbs
    1 tablespoon olive oil

    In a bowl, cut peppers in strips. Add olives, garlic, salt, pepper, oregano and parsley. Mix well. Pour into a 1 quart casserole dish. Sprinkle with bread crumbs. Bake at 325 degrees for around 20 minutes or until golden brown.

    This sounds delicious! I have to ask though, what exactly are the peppers labeled as? Or better yet, got a picture? And, what about the bread crumbs? Plain/seasoned?

    Roasted peppers in the jar^^^^ You don't have to use this brand. Use whatever brand you like.

    As far as the bread crumbs, you can use either plain or seasoned. When I make this, I use seasoned.

    Pork Chops in Orange Sauce

    6 - 8 pork chops
    2 tablespoons oil
    1 medium onion, diced
    1 tablespoon flour
    2 bouillon cubes
    1 cup hot water
    1/2 teaspoon parsley
    1/2 cup orange juice
    salt
    pepper

    Brown pork chops in frying pan and remove. In the oil, saute onion. Stir in bouillon cubes, water, flour, salt, pepper, orange juice and cook for 10 minutes. Place pork chops in liquid, cover and cook on low heat for 35 minutes or until tender.

    Rice Cake

    2 cups rice
    1 stick margarine
    1 mozzarella, chopped
    1/2 pound prosciutto, chopped
    8 eggs
    4 tablespoons grated cheese
    paprika

    Mix all ingredients. Put in a greased baking dish. Bake at 350 for about 1/2 hour or until golden brown
