This recipe is fast and easy and delicious:

sautee garlic and oil in pan. Add shrimp or chicken pieces. Add red pepper flakes. Cook. Add some basil leaves. Add some sun-dried tomates. Add some peccorino romano cheese. Simmer.

Cook pasta (whatever kind you like)

Take the mixture and pour over pasta. Add more cheese. It's really good. Don't ask me for measurements. I don't measure when I cook. I just throw a little of this and a little of that in..hehe....

cheesecake

3/4 cup sugar
1 1/2 lbs. ricotta cheese
6 large eggs, separated
1/4 cup flour
zest of 1 orange or 2 lemons
1/4 teaspoon salt

Pre heat oven to 375

Whisk together ricotta, eggs yolks, flour, half of the sugar, zest and salt. Set aside.

Place egg whites in bowl. Beat until foamy. With mixer on high, add remaining sugar until whites form stiff peaks.

fold the egg white mixture into the ricotta mixture. Pour into a buttered springform pan and bake for 1 hour or until toothpick comes out clean.

Pierogie Pie

10-12 potatoes boiled, mashed
2 finely chopped onions
3/4 lb. Grated cheddar cheese
1 lb cooked lasagna noodles
2 -3 sticks of butter

Add cheese to mashed potatoes ( I also add salt pepper and milk or cream to mashed potatoes)
Sauté onions in butter until soft.
Add ˝ of onion butter mixture to potatoes.
Layer noodles and potatoes in a 13x9 pan, ending with the noodles. Pour the remaining butter/onion mixture on top.
Cover and bake at 350 until heated through, about 40 minutes +/-.

Tastykakes

˝ cup milk
1 Tblsp butter
2 eggs
1 cup sugar
1 tsp baking powder
1 cup flour
1 tsp vanilla
Peanut butter and 6 Hershey bars

Scald the milk and butter, set aside, and let cool just slightly.
Mix the eggs, sugar and vanilla, add the flour and baking powder, then and the milk and butter, mix well.

Spread in a 13x9 greased and floured pan. Bake @ 350 for 20 minutes.

When the cake is done, let in cool for five minutes. Spread the peanut butter over the top of the cake. Lay the Hershey bars over the peanut butter. Put the cake back into the oven (shut the oven off after the cake is done, just shut the door to keep the heat in!) Leave it in there for just a couple of minutes, just long enough to melt the Hershey bars (they get shiny). Remove the cake from the oven, spread the melted chocolate bars over the peanut butter, and let the cake cool. The chocolate will harden on the top, just give it a bit of time, or put it in the fridge!

I like a thicker cake, so I double this recipe and bake for 30-40 minutes. We like crunchy peanut butter, so I use that rather than the smooth.

Paula Deen's Pineapple Casserole

1 cup sugar
6 tablespoons all-purpose flour
2 cups grated sharp cheddar
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs (recommended: Ritz)
8 tablespoons (1 stick) butter, melted, plus extra for greasing pan

Preheat the oven to 350 degrees F.

Grease a medium-size casserole dish with butter.
In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

Impossible Cheeseburger Pie

1 pound ground beef
large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 ounces)
1/2 cup Bisquick
1 cup milk
2 eggs
Heat oven to 400°. Grease 9-inch pie plate. Cook beef and onion until beef is brown; drain. Spread in pie plate; sprinkle with salt and cheese. Stir remaining ingredients until blended. Pour into pie plate. Bake about 25 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Chicken Divan

1 can of cream of chicken soup (I like campbells)
1 1/2 cup of water
1 cup of rice (minute rice)
1 cup broccoli (florets frozen is best)
1 large can of chicken breast meat (you can chop up some chicken leftover if you have it, you just want the meat tho, no bone or skin)

Mix soup and water in a large pot (all ingredients are eventually going to be in this pot) and bring to a boil.
While waiting for soup, micro broccolli for a couple of minutes in a med size bowl.
When broccolli is done chop it up, and add chopped up meat from can
When soup is to a boil, add rice to it (follow time on rice box) usually boil for a mintue while you stir in rice, and then take off heat and set aside, put on a lid to pan and set timer for 15 mintues, when rice is done, then add all the stuff together into pan.
I put mine on a plate and add cheese and a pinch of salt if you need it. I have been using jalepeno' cheese and chedder, it gives it a kick, but you can use cheedar only if you like.
I have experimented with this recipe and add water or more chicken or more broc , I have almost got it where I want it, but I make like 4 times as much so I can heat it up for luch or my dinner.
I only use 2 large cans when I make 4 times as much and only 2 cups of broccolli, I just use 6 cups of water to 4 cups of rice.
This is easy to make and doesn't take alot of time to cook.

My very own marinated flat iron steak-----Shon, this one's for you!

2 lb flat iron steak (flank or skirt steak will work, too)
3 tablespoons soy sauce
2 tablespoons frozen OJ concentrate
1 tablespoon brown sugar
3 cloves crushed garlic
2 teaspoons fresh grated ginger
black pepper to taste

Throw steak in a zip top bag. Combine marinade, mixing until brown sugar is dissolved, pour into bag. Press all the air out, seal, and stash in the fridge 8 hours or overnight.
Oven directions:
Set oven to broil. Place steak on wire rack over a sheet pan (sheet pan should be covered with aluminum foil). Salt to taste with course kosher salt. Drain marinade into a bowl. Place steak under broiler 7-12 minutes per side (5 for med rare/rare, 10 for med well) baste lightly every couple minutes.
Also great on the grill. If grilling, wait until just before the end of cooking before you baste so the sugar doesn't burn.

Slice thin across the grain. Serve on salad or with your favorite potato or pasta sides. ENJOY!

Easy garlic Alfredo sauce.

1 sm clove garlic, crushed
2 tablespoons butter
1 pt. heavy cream
1 cup grated Parmesan
1/2 cup grated parmesian reggiano
salt and pepper to taste

Melt 2 tablespoons butter over low heat. Add crushed garlic and black pepper. Do not let garlic and butter get hot enough to brown! You want the garlic lightly cooked, not sauteed. Slowly add heavy cream, whisking constantly. Bump heat up to medium, stirring every minute or so. Grate parm and parm reggiano. When cream is just warm enough to start melting the cheese, add cheese by a few tablespoons at a time, stirring until melted after each addition. When all the cheese has melted, taste to see if salt is needed. Continue to cook on medium heat until sauce comes just to a light boil, remove from heat.
Add to favorite pasts (I like fettuccine riggate), or serve over chicken or red meat dish.

Sauce is very rich, so use sparingly on red meats!

Acapulco Chicken:

4 boneless skinless chicken breasts
2 tbsp butter/margerine
1/8 cup of cooking oil
1 avacodo cut in half longways and de-pit, then slice to desried thickness
1 pkg pre cut mixed (yellow/green/red bell peppers) or buy singley and slice
into 1/2 inch strips long ways
1 onion cut into slices then cut slices in half
4 slices of monteray jack/or pepper jack cheese (i get this from the deli and I use extra thin slices of both)
1 can refried beans (or you can make your own pintos)
1 bag tossed salad..or prepare your own

put butter and cooking oil in large skillet that has lid
place chicken in pan and simmer/covered, turing every couple of minutes
about 5 minutes before chicken is done place desired amount of onions and all bell peppers on chicken pieces then place cheese on top cover with lid..once cheese has melted placed desried amounts of avacodo slices on top of the cheese, press a little to keep in place, replace lid and let simmer for about 5 minutes...on low....
Remove from skillet and serve with bean and salad!
Enjoy...this is one of my favorite meals....
Prep and cooking time approx...40-45 minutes

Default Pozole

this one's on my mind since I just made it the other day.

Pozole (a mexican soup)
I use dried hominy, but you can use canned too. If using canned, it won't need to cook for nearly as long.

Soak dried hominy in water for several hours or overnight
Simmer soaked hominy in salted water for about 2 hours (in the 2nd hour I add pork bones if I have any)
In the 3rd hour, I sautee pork chops or country style ribs w/ onion, garlic & diced jalapeno. I also add chile powder, cumin, mexican oregano, red pepper flakes, garlic & onion powder.
Add hominy w/ water to sautee mixture & add water to cover. Simmer for another 1-2 hours until pork is falling apart & hominy is tender.
Optional, but I add chopped zucchini in the last 30 minutes.
